Eat for the Week

It's been ages since I've posted here. I've been busy on my other blog and with settling into school. But I'm back with the first big meal my roommate and I have cooked.

We all need to save time. We can only allow ourselves so much time between the end of classes and *cough cough* going to the library. A good strategy: cook something big at the beginning of the week that you can pick off of for the rest of the week. Things like lasagna are great for that. My darling roomie came up with a great recipe for cheesy chicken casserole on Monday night:

Ingredients:
2 cups white rice, uncooked
1 can cream of chicken soup
1/2 can cream of mushroom soup
As much chopped broccoli as you want
3/4 lb. chicken breast, cut up
grated cheddar cheese
breadcrumbs

Cook the two cups of rice like you normally would. When the rice is almost done, cook the chicken in a skillet until it's cooked all the way through. Put the rice and chicken into a greased casserole dish. Mix in the soup and as much as cheese as you want into the casserole then sprinkle more on top. Cover with bread crumbs. Break at 300 degrees for a half hour. Enjoy!
